I usually like a good mix of fruits or vegetables in my salads. I’m the one that will often load up a salad with an array of healthy toppings until I feel like it no longer needs to be “dressed” with anything other than maybe a little olive oil. However, sometimes you may be craving something sweet instead of something healthy- so, I encourage you to combine the two for a dish that can promote eye health. Try a spinach salad with fruit and a balsamic reduction (but look for one that is just balsamic vinegar and pure cane sugar).
Dark leafy greens such as spinach and kale are great sources of the antioxidants lutein and zeaxanthin. Research shows that diets rich in these can protect against age-related eye diseases. Spinach is also full of vitamins A, C, E and K. And when you add fresh strawberries and dried cranberries, you add more of the antioxidants vitamins A & C. The vitamin C found in berries may actually reduce the risk of cataracts and macular degeneration. Plus, adding nuts like almonds can boost your eye health because they are rich in omega-3 fatty acidsand vitamin E.
So if you’re craving some eye-candy this summer (and I mean something sweet to eat that is healthy for your eyes), this salad is worth trying!
Sweet Summer Spinach Salad
Ingredients (serves 2):
- 4 cups spinach
- 3 strawberries, sliced
- 2 tbsp dried cranberries
- 2 tbsp almond slivers
- 2 tsp parmesan cheese, freshly grated
- 2 tsp white (or regular) balsamic reduction
- Divide the spinach into two bowls.
- Divide the strawberry slices, dried cranberries, and almond slivers among the salads.
- Grate the parmesan cheese and sprinkle on each salad.
- Finally, drizzle the balsamic reduction across the top and enjoy!
