Roasted Sweet Potatoes with Cranberries

Thanksgiving is a time to create many memories, as we gather with family members for what may be the biggest meal we will have all year. We spend the day visiting with family members we have not seen in months or even years. We also crave certain dishes on the table. We look forward to the turkey and perhaps a sweet potato dish (hopefully one that is not too sweet). While it is nice to indulge in the traditional favorites, it is also fun to start a new tradition by adding a twist to one of your side dishes.

For something creative and different this Thanksgiving, try these Roasted Sweet Potatoes with Cranberries. The dish has a bit of sweetness, but also a little tanginess and saltiness to balance it out. And it is loaded with antioxidants to boost eye health. Sweet potatoes have copious amounts of vitamin A and vitamin C. The orange juice and cranberries provide vitamins A, C and E. All of these antioxidants help protect your eyes from diseases like cataracts, macular degeneration and glaucoma.

Ingredients (Serves about 8):

4 sweet potatoes, peeled and cubed
1 – 2 tbsps grapeseed oil
1 ¼ – 1 ½ cups fresh cranberries
2 tbsp brown sugar, packed
2 tbsp juice from an orange
⅓ cup pecans pieces
¼ tsp cinnamon
¼ cup feta cheese (plus extra)


1) Preheat oven to 400 degrees. Place cubed sweet potatoes on two cooking sheets, drizzle oil onto them, and toss to coat. Then spread into a single layer on the pans.
2) Roast in oven for 10 minutes. Take pans out, mix up the sweet potatoes. Then arrange them back in a single layer and distribute cranberries throughout. Roast for another 10 minutes.
3) Stir and combine orange juice with the brown sugar in a small bowl. Take the pans out of the oven to drizzle that mixture over the sweet potatoes and cranberries. Then, sprinkle the pecans and cinnamon across the pans. Place back in oven for another 10 minutes, or until sweet potatoes are soft and cranberries have burst open.
4) Take out of the oven, mix in the feta cheese while the pans are still hot. Then transfer to a serving dish. Sprinkle extra feta on top if desired. Serve warm.
