The carrots, apples and kale in this salad have the vitamin A, C and E necessary for preserving eye health, warding off eye diseases like macular degeneration, cataracts and glaucoma.

Ingredients (serves 2):
- ¾ cup carrot peels
- ½ of a red apple, thinly sliced
- 1 cup kale, shredded
- 2 tbsp raisins
- 1 ¼ tsp balsamic reduction
Directions:
- Use a carrot peeler to thinly slice about 2 carrots. Place the carrots in a medium mixing bowl, along with the thin apple slices, shredded kale, raisins and balsamic reduction.
- Mix together well and serve.
