Kiwi-Mango Smoothie

Cool down on hot summer days with this kiwi-mango smoothie.

This kiwi-mango smoothie will not only cool you off, but will provide loads of antioxidants for eye health (and immune health while you’re at it!). Vitamins A and C are just two antioxidants that help reduce the risk of eye diseases like cataracts, macular degeneration and glaucoma. And mango is one of the best fruits you can eat to get both vitamins. This smoothie alone gives you more than half of the vitamin A you need for the day. Paired with kiwi and orange juice, you’ve got more than enough vitamin C!

In the summertime, if you prefer a popsicle to cool off quickly, you can use this recipe to make about six 3-ounce popsicles. Just prepare them the night before and freeze overnight!

Ingredients: (makes about 18 oz.)

¼ cup coconut milk (Silk brand)
2 tbsp orange juice, freshly squeezed
1 cup mango, diced
½ cup banana, sliced
½ cup kiwi, diced
10 ice cubes

Directions:

1) Pour coconut milk and orange juice into blender, along with diced mango, banana and kiwi. Blend well.
2) Add ice cubes and blend on medium speed for a minute or two. Pour into glass and serve cold. (For a colder smoothie, blend in a few more ice cubes or chill in the fridge for at least 30 minutes before serving.)
