Carrot Apple Kale Salad

Cold salads are the perfect compliment to warm summer days. This cold, uncooked carrot salad is the right temperature for a summer lunch – and it’s packed with eye-healthy antioxidants. The carrots, apples and kale in this salad have the vitamin A, C and E necessary for preserving eye health, warding off eye diseases like macular degeneration, cataracts and glaucoma.

Ingredients (serves 2):

 

  • ¾ cup carrot peels
  • ½ of a red apple, thinly sliced
  • 1 cup kale, shredded
  • 2 tbsp raisins
  • 1 ¼ tsp balsamic reduction

Directions:

  1. Use a carrot peeler to thinly slice about 2 carrots. Place the carrots in a medium mixing bowl, along with the thin apple slices, shredded kale, raisins and balsamic reduction.
  2. Mix together well and serve.
